How do I tone down Thyme?

Sorry to hear about your thyme issue.  Unfortunately there is no true way to reverse the strength of the herb. You can certainly try diluting your stew with some beef broth or water, depending on the current strength of the liquid in the stew.  Best of luck to you!

If you add more potatoes, it will draw down the strong thyme taste. You can also add more water or liquid, too.

Add water? and pimento.

Well, a potato takes away too much salt. Maybe it will absorb thyme, too? I'd just add wine. It solves everything.
